Mini Cinnamon Roll Bites

I had extra pie crusts sitting in my refrigerator, with 2 days until the use by date was up.  I wasn’t sure what I was going to do with them.  I originally was going to make these super easy cookies with them, but I didn’t.  Then, I was on Facebook and I saw it!  Tasty had a video on mini cinnamon rolls!  I was going to make them in the morning.

INGREDIENTS

~ Refrigerated pie crusts

~ Melted butter or dairy free margarine (about 2 Tablespoons)

~ Cinnamon and sugar

1.Unroll the pie dough

2. With a rolling pin, roll out the pie dough a little bit more. Then, cut off the edges to make more of a rectangle shape.

3. Brush the pie dough with melted butter.

4. Sprinkle the dough with cinnamon and sugar….as much or as little as you like.

5. Roll the pie dough up.

6. Cut into thin discs.
7.  Bake at 350 for 10-15 minutes.

8. While the cinnamon rolls are baking, you can make a glaze from 1 cup powdered sugar and 1 teaspoon milk of choice. It is perfect to dip the cinnamon rolls in.
