I don’t know about you, but I am in love with quesadillas. I am sure it is not the best thing to have a crush on, but I just can’t help it. They are so easy to make. In my house, I usually always have tortillas in my fridge. There is usually always cheese of some sort too.
What is better than making quesadillas with left over ingredients you have in the fridge? In these southwest quesadillas, I used leftover sautéed bell peppers and onions along with some rotisserie chicken meat that we had from a few nights ago. Not only does my family not get bored with lunches, i am able to use up everything in my fridge. I don’t like throwing anything away. I like to use everything I buy from the store.
All you need to do is fire up your griddle. Take one tortilla and spray one side of it with butter spray and put that side down on the grille. Then add about a 1/4 cup of cheese, 2 tablespoons of the bell pepper and onion mixture (heated up if it was in the fridge like mine were), and some chicken. Then add a tiny bit more cheese to the top of that so it will “glue” the top tortilla on. Put another tortilla on top and spray that with butter spray as well. once the tortilla starts to brown and the cheese is melted, flip the quesadilla over and melt the rest of the way through. Cut into quarters and serve hot.
