Strawberry Cucumber Salad

It’s summer!  FINALLY!  I love the summer, the hot weather, the water and the sunshine.  I also love to grow veggies in the garden, along with fresh herbs.  One veggie that just speaks summer is cucumber.  They are so light and refreshing, and also grow like crazy in my garden.  I can easily eat cucumbers everyday.  They are so versatile and I can make so many dishes with them.  Salsas, salads, you name it!  Heck, I have even seen ice cream made from cucumbers.

Another food item that screams summer are strawberries.  I have not had any luck growing them at my house, but we sure do love to go to the berry farm and pick them.  We always have strawberries ready to go in the fridge at my house.  I was scrolling through the internet and saw this delicious recipe for strawberry cucumber salad.  It was a match made in Heaven.  I also happened to have everything this recipe called for right at my house.  I didn’t even have to go to the store to make it.  I love recipes like that!

INGREDIENTS

~ 1 1/3 cup sliced strawberries

~ 1/4 cup thinly sliced red onion

~ 1 1/3 cup cucumber, diced

~ 1 tsp fresh mint, chopped

~ 1 tsp fresh basil, chopped

~ 1 tsp fresh lime juice

~ A dash of salt and pepper

~ 2 TBL almond slivers

~ 1 TBL balsamic glaze (already reduced balsamic glaze in most grocery stores)

 

DIRECTIONS

Combine all ingredients besides almonds and balsamic glaze.  Drizzle with balsamic glaze and top with almonds.  Enjoy!
